About the Organization

The Pueblo Food Project is a community-led coalition working to create a vibrant, equitable, and nutritious food system for every eater in Pueblo County. We connect partners, implement and support innovative programs, and work alongside our community to ensure that all Puebloans have access to affordable, healthy, and culturally relevant food.

Position Overview

The Community Engagement Coordinator will be the connector, organizer, and “vibe builder” of the coalition. This person will manage the day-to-day operations of the coalition and its working groups, coordinate and recruit members and partners, and design engagement opportunities that energize the community. This role combines event planning, communications, relationship-building, and strategic coordination to strengthen both the Pueblo Food Project coalition and programs.

Board Meetings are held on the second Monday of each month, from 5:30-7:30pm Hybrid in the PFP Classroom. Board Meetings are open, meaning anyone can sit in on them. You can find the Google Meet link in the agenda.

Meet our Staff!

Megan Moore, Director


Megan Moore was born and raised in Pueblo, Colorado, and is a sixth generation Puebloan. She is a proud graduate of Central High School and Colorado State University Pueblo. She received a degree in communications with a minor in leadership. 

Megan currently serves as Director of Pueblo Food Project (PFP). She started with PFP as an intern during her last semester of college in 2020. Megan has found a deep passion for working in the world of food systems. She loves witnessing the impact of food skills education, thriving local food economies, and healthy food access in the her community. She is strongly committed to the Pueblo community and will continue to dedicate her love, time, and heart to Pueblo.

Megan is happily married to her partner, Kevin, and owner of a darling corgi, Jerry Jeff! Outside of PFP, Megan is an assistant tennis coach at Central High School, serves as a board member with the CSU Pueblo Alumni Association, and is a certified Colorado Master Gardener.

Serena Sakkal, Director of Admin and Impact


Serena transplanted from her home state of Florida to Pueblo, Colorado in July 2022. She graduated from the University of Florida with dual degrees in Environmental Managemenr in Agriculture and Natural Resources and Sustainability and the Built Environment, with a minor in Soil and Water Science. 

Though a lifelong lover of delicious and colorful food, Serena realized her passion for food systems work in her previous job as Sustainability Manager at the University of Florida dining program. She finds great joy and fulfillment in serving the Pueblo community through her work with Pueblo Food Project. As of September 2025, Serena lives with her husband and cat in Lakewood, Colorado. Her part-time role with PFP as Director of Admin and Impact involves managing PFP's fiscal and administrative functions, creating SOP's to improve efficiency, and tracking the impact of programs and KPI's outlines in the Pueblo Food Action Plan. 

In her free time, Serena enjoys immersing in nature through hiking, climbing, paddleboarding and stargazing, and building out her small urban homestead in Lakewood. In all that she does, Serena strives to co-create a world where humans are more meaningfully connected to their communities, nature and selves through food.

Lindy Webb, Food Skills Manager


Since 2018, Lindy has been the Pueblo County coordinator for Cooking Matters, a nationwide program of Share our Strength in local partnership with Care and Share Food Bank for Southern Colorado. In 2022, she was selected by community members to be the Pueblo Food Project Community Meal Prep initiative's lead community instructor and curriculum developer. She also served as PFP Food Access working group co-chair from 2020-2022, and has certificates in Local Food Leadership from Iowa State University and Systems Approaches to Healthy Communities from University of Minnesota. Lindy finds joy in working with community partners and volunteers to help Puebloans access and enjoy delicious and nutritious food, especially fruits, veggies and grains from local farms and gardens.

Gianna Carleo, Community Gardens Coordinator


Gianna eagerly joined PFP in 2025 and is excited to share and grow alongside the community that raised her. Gianna’s undergraduate studies at Regis University included an emphasis on community food systems where she spent much time in community gardens and living on a zero-waste farm during her second year of studies. These experiences later led her to work at Earthlinks, a community garden and farm in Denver. After working at Earthlinks and receiving her Master Community Gardner certification, Gianna moved to Philadelphia and later Kansas City where she worked at two universities to help students foster meaningful connections to the outdoors. Gianna completed a year of studies in wilderness and horticulture therapy and later received her master’s degree from Palo Alto University in mental health counseling. Gianna’s love for community gardens and spaces is matched by her love for her own garden where she spends early mornings working to grow goodies to enjoy and share.

Jolene Collins, Entrepreneur Development Coordinator


Jolene’s entrepreneurial spirit brought her to Pueblo in 2016 when she moved her wild fermented sriracha business, Jojo’s Sriracha, to Boone to start working directly with Pueblo chile farmers. Drawing on her background as a communication studies professor, Jolene has fostered opportunities for her community through education, curriculum development, and mentorship.

Jolene developed the curriculum for Pueblo Food Project's Entrepreneur Development Program in 2021. She has led over 40 local food businesses through the program to date.
